Recently, I went to tour the new Gran Destino Tower at Disney’s Coronado Springs Resort. The tower is gorgeous, with lots of classy touches and high end finishes! This feels like a deluxe moderate, for sure!

But, as always happens when touring a resort, you start to feel that pang of hunger, so I decided to make a stop at the semi-newly renamed El Mercado de Coronado. (Formerly known at Pepper Market.)

El Mercado

El Mercado is the food court option at this resort and let me tell you…it’s been completely redesigned. The new restaurant features clean colors, with pops or bright colors to accent. There is definitely ample seating available for Guests, even during the busiest of times!

Guests make their way into the food stations, where they can choose which type of food they would like to enjoy. Stations include American fare, Sandwiches, Italian, desserts, and of course, Mexican.

Now, keeping with the theme, I decided to choose the nachos from the Mexican-inspired dishes. However, they also have the option to choose the ever popular rice bowls.

I opted to choose the beef option, but there’s also a chicken option. The Beef Nachos are served as follows – Corn Tortilla Chips layered with Beef, Cheese sauce, and choice of toppings.

The Cast Member started by layering cheese sauce on the plate first…this to me was genius! Why am I not doing this at home!

Next came a heaping plate of warmed tortilla chips. Then she loaded on the beef. Then there was more cheese sauce! She sprinkled on tomatoes and jalapenos and then drizzled on the sour cream. This was a heaping pile of deliciousness when all was said and done.

Let me tell you…these were gooooooddd!!!  The beef had a lot of flavor, as did the cheese sauce. The rest of the toppings allowed for different flavors than just meat and cheese.

Now, unless you are STARVING, consider splitting these. I literally only ate half of my plate. These were exceptionally filling and I absolutely think they could be shared.

Have you tried the nachos from El Mercado de Coronado? Maybe you’ve tried other dishes! Let us know your thoughts of this quick service dining location in the in the comments, or on Facebook or Twitter!
