Marrakesh in Epcot Beef Shish Kabobs and Brochette of Chicken.

For my son's first birthday party, we decided upon an African safari theme, and what better way to celebrate than to bring in recipes from Restaurant Marrakesh in Epcot. Our main course for the party consisted of Marrakesh's beef shish kabobs and brochette of chicken.

Equipment

  • 8 8 inch wooden skewer sticks

Ingredients

  • Ingredients beef shish kabobs
  • 24 oz steak tenderloin recommended- I used sirloin
  • ½ cup onions about one small onion
  • 1 Tablespoon paprika
  • 2 tbsp coriander
  • 1 teaspoon cumin
  • 2 tbsp parsley
  • ¼ cup olive oil
  • Salt and pepper to taste
  • 8 8 inch wooden skewer sticks
  • Ingredients brochette of chicken
  • 24 oz. chicken breast
  • ½ bunch fresh parsley
  • ½ bunch fresh coriander or cilantro
  • 1 tsp. garlic
  • ½ tsp. cumin
  • ¼ cup olive oil
  • 1 tbsp. lemon juice
  • 8 8 inch wooden skewer sticks
  • this recipe also calls for 2 drops of yellow food coloring, which I did not use

Instructions

  • To prevent your skewer sticks from burning, soak them in some water before using them. While they are soaking, you can finely chop the onion, coriander, and parsley until they are very fine. Cut your steak into cubes, approximately of one inch. Then mix the chopped ingredients, the steak, and the paprika and cumin until well combined.
  • Once your skewers are thoroughly damp, place the steak cubes onto the skewers. Meanwhile, heat a BBQ grill to high heat (or alternatively, you can use the broiler in your stove). You will want to cook the kebabs for a few minutes on each side for medium (pink in the middle).
  • Again, you will want to soak your wooden skewers to keep them from setting on fire. While they are soaking, you can finely chop the parsley, coriander, and garlic until they are very fine. Cut your chicken into cubes of approximately one inch. Then mix the chopped ingredients with the cumin, olive oil, lemon juice and chicken. Mix the ingredients until they are uniform and each piece of chicken has been coated.
  • When the skewers are damp, place the chicken pieces onto them. Meanwhile, heat a BBQ grill (or oven broiler) to high heat. You will want to cook the chicken kebabs for 5-6 minutes on each side to ensure they are cooked all the way through.
