Carrot cake cookies have long been a fan favorite at Disney’s Hollywood Studios. Formerly found at the now-defunct Writer’s Stop, they reappeared on Hollywood Boulevard at the Trolley Car Cafe<\/a> (the park’s Starbucks location).<\/p>\n

Calling this mammoth dessert a “cookie” is like saying Mickey is “simply a mouse.” The in-park version is about 4.5 inches in diameter, with two slabs of cookie\/cake sandwiching a generous layer of cream cheese frosting.<\/p>\n

\"\"<\/p>\n

This is definitely shareable by two hungry people. Or several more.<\/em><\/p>\n

I love carrot cake and cream cheese icing, so I thought I’d see if I could make anything resembling this Disney treat. It’s hard to do anything as well as the park’s professional bakeries, but it’s something we can have every day of the week (but probably shouldn’t!)<\/p>\n

Carrot cake cookie, home recipe<\/h3>\n

I used my go-to cake-mix cookie recipe for simplicity. You can substitute oil or margarine for the butter but watch how it spreads. You could also use a spice cake mix and add grated carrots.<\/p>\n

Ingredients:<\/strong><\/p>\n

1 carrot-cake cake mix<\/p>\n

1\/2 cup of butter, softened but NOT melted<\/p>\n

2 eggs<\/p>\n

\"\"<\/p>\n

Mix the three easy ingredients. The dough will be stiff.<\/p>\n

\"\"<\/p>\n

Use a cookie scoop (or ice-cream scoop) to make evenly-sized cookie balls on a baking sheet.<\/p>\n

Bake at 350 degrees for about 9-10 minutes.<\/p>\n

\"\"<\/p>\n

Remove cookies from the oven when they start to crinkle. Transfer them to a rack or paper towels.<\/p>\n

Cream cheese frosting<\/h3>\n

Ingredients:<\/strong><\/p>\n

4 oz. cream cheese, softened<\/p>\n

1\/3 cup butter or margarine<\/p>\n

2 teaspoons vanilla<\/p>\n

3 cups powdered sugar<\/p>\n

Beat together the cream cheese and butter until fluffy, then add vanilla. Add powdered sugar gradually until frosting is medium consistency — spreadable but not too thin.<\/p>\n

\"\"<\/p>\n

Frost one carrot cake cookie generously and gently top with another cookie.<\/p>\n

\"\"<\/p>\n

My recipe made about 16 sandwiches (32 cookies) using a cookie scoop.<\/p>\n

Are these as good as the Hollywood Studios version? Ours was more of a whoopie pie than the park’s cake-like version. It’s also quite a bit smaller — about 2.5 inches. But it tasted equally good and brought me back to my theme park vacation and its memories!<\/p>\n
