I hope you enjoy!<\/p>\n<p>&nbsp;<\/p>\n<p><b>Lentil Salad<\/b><\/p>\n<p>Sunshine Seasons &#8211; The Land Pavilion in Epcot<\/p>\n<p>Ingredients:<br \/>\n1 pound lentils<br \/>\n\u00bc cup olive oil<br \/>\n1 cup chopped zucchini<br \/>\n1 cup chopped squash<br \/>\n\u00bd cup chopped red bell pepper<br \/>\n\u00bd cup chopped Portobello mushroom<br \/>\n1 cup small red diced onion<br \/>\n\u00bd cup olive oil<br \/>\n1 cup red wine vinegar<br \/>\n1 tablespoon chopped parsley<br \/>\nKosher salt to taste<br \/>\nblack pepper to taste<\/p>\n<p>Method of Preparation<\/p>\n<p>1. Place lentils in a saucepan with water to cover the lentils.<br \/>\n2.\u00a0 Drain and cool.<br \/>\n3. In pan, add olive oil.<br \/>\n4. Grill zucchini, squash, red bell pepper and mushrooms.<br \/>\n5.\u00a0 Let cool.<br \/>\n6. In a bowl, add lentils and grilled vegetables.<br \/>\n7. Mix the olive oil and vinegar and add to lentil mixture.<br \/>\n8. Add diced onions.<br \/>\n9. Season with salt and pepper.<br \/>\n10.
