While Lisa gave us a <a href=\"https:\/\/www.themouseforless.com\/blog_world\/2015\/03\/erin-go-bragh-lets-go-celebrate-raglan-road\/\" target=\"_blank\" rel=\"noopener noreferrer\">great review of Raglan Road<\/a> yesterday, I wanted to share a little Raglan Road with you today so that you could bring a taste of the fantastic restaurant home with you!\u00a0 Here is the recipe for the Keen Eye for Shepard&#8217;s Pie for you to make the next time you&#8217;re in the mood for a good and hearty Irish meal.<\/p>\n<p><strong>Keen Eye for Shepherd&#8217;s Pie<\/strong><br \/>\n<em>Raglan Road Pub and Restaurant &#8211; Downtown Disney<\/em><\/p>\n<p>1 shallot<br \/>\n1 teaspoon caster sugar<br \/>\n1 pound potatoes<br \/>\n1 1\/4 Tbsp olive oil<br \/>\n1 small onion, finely chopped<br \/>\n1 small leek, finely chopped<br \/>\n1 small carrot, finely chopped<br \/>\n1 garlic clove, crushed<br \/>\n8 ounces lean minced lamb<br \/>\n1 1\/4 Tbsp tomato pur\u00e9e<br \/>\n1\/4 stick (1 oz) butter<br \/>\nsalt and freshly ground black pepper<br \/>\nfresh thyme leaves, to garnish<\/p>\n<ol>\n<li>Preheat the oven to 350\u00b0F.<\/li>\n<li>Cut the shallot in half and then cut into thin slices lengthways, leaving the root intact.<\/li>\n<li>Arrange the slices on a non-stick baking sheet and sprinkle with the caster sugar.<\/li>\n<li>Bake for 5 minutes until lightly golden caramelized.<\/li>\n<li>Remove from heat and leave to cool completely.<\/li>\n<li>Cover the potatoes with cold water in a pan and add a pinch of salt.<\/li>\n<li>Bring to a boil, then simmer for 15 to 20 minutes or until completely tender when pierced with the tip of a knife.<\/li>\n<li>Drain in a colander and peel the potatoes while they are still hot.<\/li>\n<li>Meanwhile, heat the olive oil in a pan.<\/li>\n<li>Add the onions, leeks, carrot and garlic and saut\u00e9 for 3 &#8211; 4 minutes until just beginning to soften but not color.<\/li>\n<li>Stir the minced lamb into the pan and cook until browned, breaking up any lumps.<\/li>\n<li>Stir in the tomato pur\u00e9e and cook gently for another 10 minutes until completely tender.<\/li>\n<li>Season to taste and keep warm or reheat as needed.<\/li>\n<li>Mash potatoes.<\/li>\n<li>Quickly heat the milk in a pan.<\/li>\n<li>Beat the butter into the warm mashed potato and then add enough milk to make a smooth but firm puree.<\/li>\n<li>To serve, spoon than mince mixture into 2 1\/2 inch ring moulds set on plates.<\/li>\n<li>Carefully remove the molds.
