Once you get past the point where it will scald your tongue (that stuff is HOT!) and you get to taste your first bite, it is like heaven in a dish. The flavors are just right and it&#8217;s the perfect dish to make now that the weather is getting cooler. This is the perfect comfort food!<\/p>\n<p>So today, I offer the recipe for making the Lobster and Scallop Fisherman&#8217;s Pie!<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Lobster and Scallop Fisherman\u2019s Pie<\/strong><br \/>\nIreland Marketplace Booth &#8211; Epcot International Food &amp; Wine Festival<\/p>\n<p>Lobster Bisque<br \/>\n2 tablespoons butter<br \/>\n2 tablespoons olive oil<br \/>\n1 1\/2 cups chopped onion<br \/>\n2 cups chopped celery<br \/>\n1 1\/2 cups chopped fennel<br \/>\n2 lobster shells, meat removed<br \/>\n1\/2 cup tomato pur\u00e9e<br \/>\n2 tablespoons flour<br \/>\n1 tablespoon cognac<br \/>\n4 cups fish or chicken stock<br \/>\n2 cups heavy whipping cream<br \/>\n1\/4 teaspoon cayenne pepper<br \/>\n1 teaspoon crushed garlic<br \/>\n1 teaspoon chervil<br \/>\n1\/2 teaspoon coarse salt<br \/>\n1\/4 teaspoon freshly ground black pepper<\/p>\n<p>Mashed Potatoes<br \/>\n4-6 large potatoes, peeled and cubed<br \/>\n4 tablespoons butter<br \/>\n1\/2 cup heavy whipping cream or milk<\/p>\n<p>Lobster and Scallop Fisherman\u2019s Pie<br \/>\n2 tablespoons butter<br \/>\n1 tablespoon olive oil<br \/>\n1 cup diced onion<br \/>\n1 cup diced celery<br \/>\n1 cup diced carrot<br \/>\n3 1\/2 tablespoons flour<br \/>\n2 tablespoons brandy<br \/>\n1 pound bay scallops<br \/>\n1 quart lobster bisque (recipe below)<br \/>\n1 pound lobster meat, cooked and chopped<br \/>\n1\/2 teaspoon tarragon<br \/>\n1\/8 teaspoon hot pepper sauce<br \/>\n2 cups shredded Irish cheddar cheese<\/p>\n<p>For lobster bisque:<br \/>\n1.\u00a0\u00a0 Place butter and olive oil in a large saucepan over medium heat.<\/p>\n<p>2. Saut\u00e9 the onions, celery, and fennel for 6-7 minutes or until they are tender.<\/p>\n<p>3. Add the lobster shells and tomato pur\u00e9e and continue to cook for 1-2 minutes.<\/p>\n<p>4. Add the flour and stir until combined and continue to cook for another 1-2 minutes.<\/p>\n<p>5.\u00a0\u00a0 Add the cognac and stock and continue cooking for 30 minutes.\u00a0 While cooking, stir and scrape the bottom of the sauce pan with a wooden spoon to loosen any brown bits.<\/p>\n<p>6.\u00a0 Add the heavy whipping cream and bring mixture to a boil and continue cooking for 15 minutes.<\/p>\n<p>7. Add the cayenne pepper, garlic, and chervil and stir to combine.<\/p>\n<p>8.\u00a0\u00a0Remove the lobster shells and carefully place mixture in a blender and blend on medium for 15-20 seconds, or until combined and smooth.\u00a0 Stop the blender to scrape the sides and blend for another 5 seconds.<\/p>\n<p>9.\u00a0\u00a0Pour the bisque through a fine strainer lined with cheesecloth to remove any shell pieces.<\/p>\n<p>10.\u00a0\u00a0Pour the bisque back into the saucepan over medium heat and bring it back to a boil.<\/p>\n<p>11. Season to taste with salt and pepper. Set aside.<\/p>\n<p>For mashed potatoes:<br \/>\n1.\u00a0 Place the potatoes in a large stockpot of boiling, lightly salted water over high heat for 15 \u2013 20 minutes or until the potatoes are soft.<\/p>\n<p>2.\u00a0\u00a0Drain the water and whip the potatoes with a hand held mixer on low speed until soft.<\/p>\n<p>3.\u00a0\u00a0Add butter and heavy whipping cream and mix until combined.<\/p>\n<p>4. Season to taste with salt and pepper.\u00a0 Set aside.<\/p>\n<p>For lobster and scallop fisherman\u2019s pie:<br \/>\n1.\u00a0\u00a0 Preheat the oven to 350 degrees.<\/p>\n<p>2.\u00a0\u00a0 Place butter and olive oil in a large stockpot over medium heat.<\/p>\n<p>3. Saut\u00e9 the onions, celery, and carrots for 6-7 minutes or until they are tender.<\/p>\n<p>4. Add the flour and stir until combined and continue to cook for another 1-2 minutes.<\/p>\n<p>5.\u00a0\u00a0Add the brandy and stir while cooking for 1-2 minutes to cook off the alcohol.<\/p>\n<p>6.\u00a0\u00a0Add the scallops and lobster bisque and stir to combine.\u00a0 Continue to cook for another 8-10 minutes or until the mixture comes to a boil.<\/p>\n<p>7.\u00a0\u00a0Add the cooked lobster, tarragon, and hot pepper sauce and stir to combine.\u00a0 Season to taste with salt and pepper.<\/p>\n<p>8.\u00a0\u00a0Carefully pour the mixture into a 3 quart baking dish.\u00a0 Top with the mashed potatoes, covering the entire dish and sprinkle with cheddar cheese.<\/p>\n<p>9.
