I arrived in time to savor a hearty meal of fish and chips while enjoying the music of <b>The Brayzen Heads <\/b>on the Raglan Road Patio. \u00a0I talked with David Gilmore (guitar &amp; lead vocals) and Shane Farrell (banjo &amp; violin) and asked them what it meant to play during this, their second St. Patrick\u2019s Day festival at Downtown Disney.<\/p>\n<p>David who calls Dublin home and Shane born in Manchester to Irish parents, have been performing together for quite some years. \u00a0After a seven-year gig in Spain, they packed up their gear and brought their vibrant tunes to Florida.\u00a0 They love interacting with their audience during their daily, year-round performances at Raglan Road Pub and they convey their love for Ireland through their music and chats in between sets. \u00a0<i>\u201cEverybody comes out on St. Patrick\u2019s Day, no matter if they are Irish or not\u201d <\/i>said Shane and David confided<i> \u201cI don\u2019t mind working on St. Patrick\u2019s Day, I enjoy the unique atmosphere.\u201d<\/i><\/p>\n<figure id=\"attachment_32904\" aria-describedby=\"caption-attachment-32904\" style=\"width: 400px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/www.themouseforless.com\/blog_world\/wp-content\/uploads\/2014\/03\/photo-41.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-32904\" alt=\"The Willis Clan\" src=\"https:\/\/www.themouseforless.com\/blog_world\/wp-content\/uploads\/2014\/03\/photo-41-400x400.jpg\" width=\"400\" height=\"400\" srcset=\"https:\/\/www.themouseforless.com\/blog_world\/wp-content\/uploads\/2014\/03\/photo-41-400x400.jpg 400w, https:\/\/www.themouseforless.com\/blog_world\/wp-content\/uploads\/2014\/03\/photo-41-150x150.jpg 150w, https:\/\/www.themouseforless.com\/blog_world\/wp-content\/uploads\/2014\/03\/photo-41.jpg 480w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/a><figcaption id=\"caption-attachment-32904\" class=\"wp-caption-text\">The Willis Clan<\/figcaption><\/figure>\n<p>An absolute must see is the multi-talented <b>Willis Clan<\/b>, a family of musicians who merge their Irish roots with other genres. Jada, at age three is the youngest of this energetic group and a joy to watch. The family, mom, dad and 12 children, hails from Tennessee and they are simply amazing!<\/p>\n<figure id=\"attachment_32905\" aria-describedby=\"caption-attachment-32905\" style=\"width: 300px\" class=\"wp-caption alignleft\"><a href=\"https:\/\/www.themouseforless.com\/blog_world\/wp-content\/uploads\/2014\/03\/photo-5.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-32905 \" alt=\"Elevation\" src=\"https:\/\/www.themouseforless.com\/blog_world\/wp-content\/uploads\/2014\/03\/photo-5-300x400.jpg\" width=\"300\" height=\"400\" srcset=\"https:\/\/www.themouseforless.com\/blog_world\/wp-content\/uploads\/2014\/03\/photo-5-300x400.jpg 300w, https:\/\/www.themouseforless.com\/blog_world\/wp-content\/uploads\/2014\/03\/photo-5.jpg 450w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><figcaption id=\"caption-attachment-32905\" class=\"wp-caption-text\">U2 Tribute band Elevation<\/figcaption><\/figure>\n<p>The lineup for the festival was exquisite and diverse. <b>We Banjo Three<\/b>, a quartet from Galway, Ireland, known for combining Irish music with old-time American and Bluegrass, played on the Raglan Road Pub stage and so did the popular U2 tribute band <b>Elevation<\/b>.<\/p>\n<p>Even the rain on St. Patrick\u2019s Day could not stop the fun. The bands played on and hundreds of Irish, whether by birth or by spirit\u00a0 &#8211; braved the elements turning Downtown Disney into a sea of green-bedecked, fun seeking revelers.<\/p>\n<p>Renowned Irish dancer and choreographer <b>Ronan McCormack<\/b> of the original Riverdance cast presented the Irish Dance Workshop \u201cFrom Roots to Riverdance\u201d. In no time kids and grownups took to the stage. While I had my moment in the sun I quickly realized that I am not yet material to join the <b>Raglan Road Dancers<\/b>. So here it goes for <b>Glazed Loin of Bacon with Colcannon Mash<\/b>:<\/p>\n<p><span style=\"text-decoration: underline;\">Ingredients<\/span>:<br \/>\n<b><br \/>\nGlazed Loin of Bacon<\/b><br \/>\n900g\/2lb loin of bacon<br \/>\n2 tbsp Irish Mist whiskey liqueur<br \/>\n4 tbsp honey<br \/>\n100ml \/ 3\u00bdfl oz\/scant\u00a0<span style=\"line-height: 1.5em;\">\u00bd cup cider<\/span><\/p>\n<p><b>Colcannon Mash<br \/>\n<\/b>8 small Savoy cabbage leaves, trimmed down to form cups<br \/>\n<span style=\"line-height: 1.5em;\">5-6 large potatoes, peeled<br \/>\n<\/span><span style=\"line-height: 1.5em;\">55g\/2oz\/\u00bc cup butter<br \/>\n<\/span>60ml\/2fl oz\/generous\u00a0\u00be cup buttermilk<br \/>\n100g\/3\u00bd oz Savoy cabbage, shredded salt and pepper<\/p>\n<figure id=\"attachment_32896\" aria-describedby=\"caption-attachment-32896\" style=\"width: 282px\" class=\"wp-caption alignleft\"><a href=\"https:\/\/www.themouseforless.com\/blog_world\/wp-content\/uploads\/2014\/03\/loin-of-bacon-photo.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-32896\" alt=\"Loin of Bacon\" src=\"https:\/\/www.themouseforless.com\/blog_world\/wp-content\/uploads\/2014\/03\/loin-of-bacon-photo-282x400.jpg\" width=\"282\" height=\"400\" srcset=\"https:\/\/www.themouseforless.com\/blog_world\/wp-content\/uploads\/2014\/03\/loin-of-bacon-photo-282x400.jpg 282w, https:\/\/www.themouseforless.com\/blog_world\/wp-content\/uploads\/2014\/03\/loin-of-bacon-photo.jpg 424w\" sizes=\"auto, (max-width: 282px) 100vw, 282px\" \/><\/a><figcaption id=\"caption-attachment-32896\" class=\"wp-caption-text\">Loin of Bacon<\/figcaption><\/figure>\n<p><b>How to<\/b>: Place the loin of \u00a0bacon in a large pan and cover with cold water. Bring to the boil, then reduce the heat and simmer for 1 \u00a0hour until completely tender. Preheat the oven to 180\u2019C\/150F\/ Gas Mark 4. \u00a0Place the Irish Mist in a pan with the honey and cider, then heat gently until dissolved. Remove the loin of bacon from the water and leave until cool enough to handle,\u00a0then trim away the rind and excess fat.<\/p>\n<p>Place the loin of bacon in a small roasting tin and brush all over with the glaze, pouring\u00a0any remainder around the loin. Bake for 15-20 minutes until completely heated through and well \u00a0glazed, \u00a0basting occasionally. Remove the bacon from the oven and leave in a warm place for at least 10 minutes. Blanch the cabbage cups in a pan of boiling salted water until just tender but still holding their shape. Drain well and toss in the remaining knob of butter. Season to taste.<\/p>\n<p>Meanwhile bring the potatoes to the boil, then simmer for 15-20 minutes or until completely tender. Drain in a colander and return to the saucepan. Add the butter and buttermilk, then mash using a potato masher. Add the shredded cabbage and season well with salt and pepper. Slice the bacon and place on a bed of colcannon mash, and the Savoy cabbage cups and drizzle with pan reduction.
